Currant Welsh Cake Mix with juicy Zante currants. Makes 12+ Welsh Cakes. You could make some mini ones for tea too.
We love to eat our Welsh Cakes as they are, but you can warm them up, add a dab of butter, some honey, a drop of jam or a square of tasty cheese. Or, you can make a delicious cream tea with just a spot of clotted cream and some of our delicious preserves. Griddled Welsh Cakes are perfect to store in the freezer in an airtight container. Enjoy!

With our Welsh Cake mixes, you can create your own amazing Welsh Cakes in the comfort of your own home. You will need a rolling pin, two bowls and a spoon for mixing. An egg (or egg replacer), a little butter and a spot of milk. A griddle, metal plank or frying pan will be perfect for griddling your cakes.
Preheat the griddle or frying pan to around 250/300 degrees F. In a bowl or food processor add the Welsh Cake mix and butter. Cut the butter into the dry mix or pulse in a food processor until the mix resembles coarse meal / crumble.
Add flavorings (Chocolate Chips, Cranberries or Currants) and some nuts if you like and stir. In a small bowl, whisk egg and milk together. Add egg mixture to dry mix and form a ball. Dough should not be wet. You may not need all the liquid.
On a lightly floured surface, roll to about 1/3" thick. Cut with 3" round or smaller, re-rolling until you have 12 cakes approx. Cook until golden brown, about 5 minutes per side.
How to Eat My Welsh Cakes
